Tahini Apple Cobbler (Paleo, Gluten-Free)

I’ve been posting apple recipes all fall leading up to this one apple recipe that I truly believe to be the peak of my career as a recipe developer: Tahini Apple Cobbler. It’s the most perfect crispy, flakey cobbler topping wrapped around a sweet and salty apple filling that will rock your world. Oh, and it’s paleo, nut-free, AND vegan. That’s right–it’s truly a cobbler recipe for the people!

I’ve never thought much of cobblers before because they always sounded a bit dull–like dry biscuits over fruit? Nothing sounds very dessert-like about that. Maybe it’s the cassava flour or the tahini, but something about this recipe takes cobbler to a new level. I mean how do you say no to a salty tahini biscuit over perfectly baked apples? I can honestly say that I crave this cobbler ALL the time. It kind of stinks that I have to spend my time making other recipes because this is really all I want to eat from now on. Cobbler is a well-rounded meal, right? Especially when it’s paleo?

Why put tahini in your apple cobbler?

Tahini is truly the best ingredient of our time, and it’s the reason this apple cobbler is the phenomenon that it is. Where do I begin? I made a blueberry version of this cobbler this past summer and as soon as I took a bite I knew it needed to be made with apple, too. When you put it in a cobbler topping an extra magical experience happens: buttery, nutty, and crisp on the edges, which makes it the perfect compliment to cinnamony, syrupy baked apples. I’m literally drooling just thinking about this cobbler. So if you’re still questioning the tahini thing, just trust me. You’ll never go back to regular cobbler!

What apples to use for a cobbler:

When making an apple cobbler it’s best to choose apples that won’t get too mushy in the crisp when baked, since they’ll make the bottom of the topping soggy…ew.  I use gala apples in pretty much everything, but Granny Smith and Braeburn also work great, because they keep their integrity even when cooked. You can either peel your apples or leave the peels on depending on your preference. Both versions are delicious!

I wanted to make this apple cobbler paleo and vegan so that it would be easy to share with a crowd no matter what dietary preferences you have at play. After all, holiday food is for sharing! I used cassava flour for the base of the topping, which makes this recipe also one that is nut free! The mix of coconut oil, tahini, and coconut milk is enough moisture for the biscuits so you don’t need to add an egg, thus keeping this recipe vegan. I was so pleased with how perfectly flakey the topping was and tested it multiple times to make sure it wasn’t a fluke–it wasn’t!

Ingredients for Grain-Free and Vegan Tahini Apple Cobbler:

As if this Paleo Tahini Apple Cobbler could get any better, it’s also super easy! You just mix together your apple filling and put it in a pan, then mix your topping ingredients together, place it over the apples, and bake! Here’s what you need to make it happen:

  • Cassava flour–this is key to a flakey, delicious cobbler topping.
  • Tapioca Starch– can sub arrowroot starch if needed.
  • Coconut sugar – my favorite low-inflammatory sweetener. You can sub regular sugar if desired.
  • Baking soda – for that fluff factor and a bit of lightness in the cobbler
  • Coconut oil – make sure this is room temperature, not too cold or melted.
  • Full fat coconut milk, or another non-dairy milk to add moisture to the biscuit topping (almond works great as well).
  • Tahini – the star of the show! You can even drizzle a little extra on the finished dessert if you want to be fancy.
  • Apple: wouldn’t be an apple cobbler without apple! See notes above for the best kind of apples to use.
  • Cinnamon: I love how the cinnamon compliments the apple and tahini. Add a little extra if you know whats good for ya.

How to make the best Paleo Tahini Apple Cobbler:

Here are a few extra tips to help make your tahini cobbler top-notch.

  • Use cold coconut oil and cut it into the flour with a fork or pastry cutter instead of pouring in melted oil.
  • Serve with coconut whipped cream or dairy free ice cream. Is any dessert complete without ice cream?
  • Form biscuit-like shapes with the cobbler crust instead of just crumbling it over the top of the apple filling.
  • Use good quality tahini (if it’s super dry that’s a sign it’s not a good one.) I recommend Seed and Mill!
  • Serve with a drizzle of my healthy salted caramel sauce.

INGREDIENTS

For Apple Filling

  • 6-7 apples peeled and sliced
  • 1 tbsp cinnamon
  • 2 tsp nutmeg
  • 2 tbsp coconut sugar

For Tahini Cobbler:

  • 1 1/2 cups cassava flour
  • 1/4 cup tapioca starch
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup + 2 tbsp cup coconut oil
  • 1/4 cup tahini
  • 1/3 cup coconut sugar
  • 1/3 cup coconut milk

INSTRUCTIONS

  1. Preheat the oven to 350F and grease a 9 inch baking dish
  2. Mix apples, sugar, cinnamon, and nutmeg and place in the prepared dish.
  3. Whisk the cassava flour, tapioca starch baking soda, and salt.
  4. Add in the coconut oil and cut into the flour mixture. Stir in the tahini, coconut sugar, and coconut milk and stir until a thick dough forms.
  5. Form about 6-7 biscuit-shaped balls and place them on top of the apples to form a crust layer.
  6. Place the the dish into the oven and bake for 30-35 minutes
  7. Remove from the oven and allow to sit for 15 minutes to thicken. Serve warm with coconut ice cream!
