It’s always a good day when we’re talking about granola. I’ll never forget when my grandparents came to visit when I was a kid and my mom bought granola for them. I tried a handful for the first time and was immediately in love with those crumbly bunches. I’d easily take granola over dessert any day–it’s just so dang good!

Of course, I had to immediately find a substitution when I stopped eating oats, because no one should have to live a life without granola! Thankfully it’s pretty easy to make grain-free using a combination of nuts and spices. I opted to make this recipe both grain and sugar-free, using natural honey for sweetness and some flakey sea salt for that delicious sweet-and-salty combo that we all love.

How to make granola grain-free:

While some purists might argue that you can’t make granola without grains, I beg to differ. Those people also probably haven’t had massive allergic reactions and heart palpitations from eating oats like this girl (but I digress.) You can easily make the same, delicious, crunchy granola bunches without oats. Oats do not have a monopoly on this situation. You just need the right amount of nuts and seeds and you’re golden!

What you’ll need to make the best Salted Honey Walnut Grain Free Granola

The thing I love most about making grain-free granola is how easy and versatile it is! You can mix and match the ingredients to fit what you have on hand in your pantry.  And if you don’t like coconut you can just use more almonds or seeds of your choice. Then you just mix everything together and pop it in the oven! You’ll want to stir the granola halfway through to help it brown evenly while it bakes. Oh! And it’s made without refined sugar–win-win! Here’s everything you need:

  • Slivered Almonds
  • Walnut Pieces
  • Unsweetened coconut flakes (I like the large flakes instead of shreds)
  • Chia Seeds
  • Pumpkin Seeds
  • Honey (or maple syrup for vegan)
  • Coconut oil
  • Vanilla
  • Cinnamon
  • Sea salt

In terms of storing, you can keep your grain-free granola in an air-tight container in the fridge or freezer for up to a week.

Naturally Sweetened Grain-Free Granola

And on top of being easy to make and customize, this granola is equally easy to enjoy! It’s amazing all on its own, or you can enjoy it on coconut milk yogurt, over fruit, on top of pancakes, or even on ice cream (seriously amazing!) I also love it on top of some roasted pears or apples for a delicious sweet and salty crunch. Imagine pie, but with more texture!

INGREDIENTS

  • 1/4 cup honey
  • 2 tbsp coconut sugar
  • 3 Tbsp coconut oil melted
  • 1 tsp vanilla
  • ½ tsp. cinnamon
  • 1/4 tsp fancy sea salt
  • 2 cups slivered almonds
  • 1/2 cup walnut pieces
  • 1/2 cup pumpkin seeds
  • 1/2 cup unsweetened coconut flakes
  • 2 tbsp chia seeds
  • Extra salt for topping

INSTRUCTIONS

  1. Preheat oven to 275 F°. Line a baking sheet with parchment paper.
  2. Stir together honey, sugar, oil, vanilla, cinnamon, and salt until smooth. Mix nuts, coconut flakes, and seeds in a bowl, then pour the honey mixture over the nut mixture and stir to combine. Pour the granola onto the prepared sheet and spread evenly, forming some clumps to get granola clusters.
  3. Bake for 15 minutes, then remove and stir the granola and return to the oven to continue baking for another 10-15 minutes, or until golden. Top with additional sea salt.
  4. Allow to cool for 20-30 minutes before serving or storing in an airtight container.
