Paleo Everything Bagels

I’m not sure where the urge to make Paleo Bagels came from. But it just came, and suddenly I couldn’t think of anything else until I had one and it was perfect. And thus began hours of experimenting until finally, I was satisfied (only took 4 tries…) Thankfully I’ve been quarantined away with plenty of cassava flour so there was all the time in the world to make and eat a zillion Paleo bagels until they came out right. Its a tough job but someone has to do it.

 

As a kid, I didn’t really eat bagels. I found out I had celiac at an early age which ended most of my bread consumption, and before that, they always seemed like “bad” food based on women’s commercials  (I’m looking at you Special K) and conversations I’d overhear about fitting in jeans. Isn’t that sad? Even as a kid in elementary school I was categorizing foods as “bad.” Today though? Today I’m making a darn bagel (or 5) And I’m going to load it up with a ridiculous amount of avocado–or maybe I’ll get some dairy-free cream cheese so I can feel like I’m in New York City.

How to make Paleo Everything Bagels

Thankfully these are super easy to make and use minimal ingredients!
Cassava flour, tapioca starch, coconut oil, eggs, oil, baking soda, cream of tartar, and of course everything bagel seasoning are all you need to make these. After mixing everything up and making bagel shapes you boil them for about 1 minute and then move them into the oven to bake while you get all of your dream bagel toppings ready to go! Let them cool for a few minutes before you dive in and start loading them up with toppings. A few of my favorite bagel filling are vegan cream cheese, avocado with flakey salts, fried eggs, sauteed veggies, or whipped tahini! Omg. I’m drooling.

 

Tips for making Paleo Everything Bagels

  • Don’t boil them too long or they’ll fall apart on you!
  • Use an egg wash to get a nice shiny top like regular bagels
  • You can top with everything bagel seasoning or use course sea salt.

Paleo Everything Bagels

These crunchy Paleo Everything Bagels are made with minimal ingredients and no gluten, dairy or grains! Yet they still have the bagel crunch we all love.

SERVINGS 4

INGREDIENTS

  • 3 whole eggs
  • 1/4 cup avocado oil
  • 2 tablespoons coconut milk
  • 1/4 tsp cream of tartar
  • 3/4 tsp baking soda
  • 1 tablespoon water
  • 1 teaspoon sea salt
  • 1 cup cassava flour
  • 1/2 cup arrowroot flour
  • 2 tbsp coconut flour
  • 1 egg whisked for egg wash (optional)
  • Everything bagel seasoning

INSTRUCTIONS

  1. Preheat the oven to 350 F and line a baking sheet with parchment paper.
  2. In a large bowl whisk together eggs, oil, and milk until smooth. Whisk in cream of tartar and baking soda, and then stir in the 3 flours. Stir until well combined--the batter should be thick but moldable.
  3. Bring a large pot of water to a rolling boil
  4. Divide the dough into 4 equal parts and shape into bagels, using a little water on your hands if needed.
  5. Drop each bagel into the boiling water and remove them right after they float to the top (30 seconds or so) and place them on the parchment.
  6. Brush with an egg wash if desired and then sprinkle with everything bagel seasoning
  7. Bake for 25-30 minutes and then remove from the oven. Allow to cool and then cut in half and enjoy!
