Paleo Blueberry Crumb Bars

I’ve been on a big blueberry kick for…well..my whole life. They’re the only fruit I really love–and when I say love I mean I’ll devour a box of them as soon as I see them. I’ve been thinking about making a blueberry pie for you guys, but that sounds a little too high maintenance–I’m not here to try to make a top crust. That’s not my department. So after thinking it over I decided some blueberry crumb bars would be perfect–and they are! These bars are super easy to make, and I love how naturally sweet there are. Dare I say I’d choose these over pie? I would. It’s the truth.

So what makes these bars so great? Aside from being easy to make and delicious, I love how healthy they really are, and how allergy-friendly the ingredients are. The crumble crust is the perfect nut-free paleo crust made of coconut flour, cassava flour coconut oil, honey, and an egg. It’s the perfect complement to the naturally sweet blueberry filling made of just blueberries, a tiny bit of coconut sugar (which you could leave out), and arrowroot powder.

Oh and a warning: these are addicting. And they’re far too easy to make, so don’t be surprised if you find yourself eating them all summer long.

What you’ll need to make Blueberry Crumb Bars:

  • Coconut Flour: I love coconut flour for making a good shortbread crust in paleo baking
  • Cassava flour: This helps give a flakey texture to the crust
  • Coconut sugar: a lower inflammatory sugar option that I use in most of my baking.
  • Coconut oil: You could sub shortening or ghee, or even butter if you can tolerate it
  • Honey: adds moisture and a little more sweetness to the crust.
  • Egg: to bind the crust; you can try a flax egg to make these vegan
  • Blueberries: wouldn’t be a blueberry crumb without them! See notes below about frozen blueberries

How to make the best Paleo Blueberry Crumb Bars:

  • Don’t pack your coconut flour too much when you’re measuring or the batter may be too dry.
  • Don’t forget to line your baking dish with parchment paper.
  • Prebake the crust for 10 minutes before putting the blueberry filling and crumble on top
  • Don’t cut too quickly! Let these bars rest and cool for a few minutes before you dig in.

Can I use frozen blueberries?

Heck yes! Nothing beats fresh blueberries, but frozen blueberries work totally fine here. You can just put them in the pot frozen and cook the filling a little longer to get them to thaw. Then just make the rest of the recipe as usual!

INGREDIENTS

For crust:

  • 1 1/4 cups coconut flour sifted
  • 1/4 cup cassava flour
  • 3 tbsp honey
  • 1/2 cup coconut oil softened but not melted
  • 2 tbsp cold water
  • 1/4 tsp salt
  • 1 egg

For filling:

  • 3 cups fresh blueberries
  • 1 tbsp coconut sugar
  • 2 tbsp water
  • 1 Tbsp arrowroot starch or tapioca

For crumble:

  • 1/2 cup coconut flour
  • 1/3 cup coconut sugar
  • 1/4 cup coconut oil melted and cooled

INSTRUCTIONS

  1. To make filling, place blueberries in a saucepan over medium heat with sugar, water,and tapioca starch. Cook for 7-8 minutes, stirring every few minutes, until blueberries are broken down and thickened. Remove from heat and set aside.
  2. For crust: Line an 8x8 pan with parchment paper and set aside. Preheat oven to 350 F.
  3. In a large bowl, whisk together coconut flour and cassava flour. Add softened coconut oil and combine together with a fork until crumbly and well mixed. Stir in egg, honey and water until well combined. The batter will be crumbly but will hold together when pressed.
  4. Press the dough into the bottom of the pan and bake for 10 minutes.
  5. While the dough prebakes mix together all crumble ingredients with a fork.
  6. Top the prebaked crust with the blueberry mixture and pour the crumble evenly over the filling. Bake for 18-20 minutes, or until lightly browned.
  7. Allow to cool for at least 15 minutes then remove from pan, slice, and enjoy! Store leftovers in the fridge for up to 5 days.
