Paleo Apple Butter French Toast Bake

Good morning lovelies! I can’t believe it’s already November and we’re rounding the base to Thanksgiving and Christmas! With this time of year comes the need for more family-friendly brunch recipes that fill up a crowd, so I’m here with an Apple Butter French Toast that will keep everyone happy and full. Because the only thing better than French Toast is a fall-themed version that you don’t have to slave over a stove to make. Oh! And it’s super easy to make gluten or grain-free. A true holiday miracle! I often think about what I miss most about the gluten world. I’d have to go with either waffles or thick, buttery toast at a diner for brunch. (Omg. My mouth is watering hard.) Clearly, breakfast is on my mind (per usual.) Thankfully this Apple Butter French Toast bake fills the comfort-food void with crusty baked bread, sweet apple butter, and maple syrup.

What is a French Toast Bake?

French Toast Bake is exactly what it sounds like: baked French Toast. You need all of the same ingredients as standard french toast, just prepared in bulk and baked. It’s also very similar to bread pudding in the way that you prepare it: You combine everything for your egg mixture, soak your bread, and combine it all in a baking dish and cook until crisp on the edges. I let my bread soak overnight and then cook it the next morning and serve it up with real maple syrup. To keep it paleo I used paleo sandwich bread, but you can also use gluten-free bread or regular bread if it floats your boat!

Pasture-Raised Eggs for French Toast

The more I spend time cooking and learning about ingredients, the more I realize how much of a difference quality makes when it comes to how food tastes and how it makes me feel. I’m buying organic when I can, paying attention to what my food eats, and learning about the more ethical treatment of farm animals. When it comes to eggs I’m always looking for Pasture-Raised on my cartons, which is why I love Blue Sky Family Farms. Pasture-raised chickens are healthier and happier, which means that the eggs they produce are healthier for us. They contain more vitamins (such as D and B-12) and have a healthier Omega ratio, which is especially important if you deal with autoimmunity and hormonal issues like I do. You can see the difference as soon as your crack open the egg and see the rich, deep yolk that looks so much brighter than conventional eggs. My favorite way to cook them is fried or sunny-side-up so I can really taste the delicious, almost buttery-tasting yolk. Of course, they’re also great for recipes like this Apple Butter French Toast and lend a rich flavor and a list of health benefits that you can feel good about serving to your family. Next time you’re at the store be sure to look for the inviting blue packing with Blue Sky Family Farms Eggs. Once you try the rich, velvety eggs you’ll never go back! Tips for making this Paleo Apple Butter French Toast Bake:

  • Use a good, thick bread–not something crumbly. I used a homemade cassava flour bread, but any good gluten-free sandwich bread should be perfect!
  • Give your French Toast adequate time to soak before baking. You’ll want to let it sit for around 8 hours minimum.
  • Watch the top carefully and cover with tinfoil if it starts to burn.
  • Have lots of fresh, real maple syrup on hand for serving!

Without further ado, it’s time to make some delicious French Toast! I’d love to see your beautiful creations so don’t forget to tag me on Instagram or Facebook!
