Matcha Collagen Smoothie Bowl
Good morning lovelies! With summer in full swing I’m over here finding as many ways as possible to cook without heat, so I’m super excited to bring you this smoothie bowl recipe today! I’m all about finding as many ways as I can to sneak extra collagen and greens into my diet, so the abundance of smoothie posts are here to stay (and I mean…how can you argue with a good smoothie?)
As I’ve been working on my own gut health I’ve been finding that I really prefer smoothie bowls to smoothies in a glass for a few reasons: 1) these force you to really slow down and eat more mindfully instead of slamming a drink, and 2) they encourage chewing which is essential for digestive enzyme production. Whenever I have a liquid-based meal I always have a few bites of chicken or meat first so that I am actively chewing and encouraging enzyme production in my stomach. Side note: I’m testing a bunch of digestive enzymes lately and have yet to find one that works for me, so let me know if you have one you like!
But I digress…back to smoothies.
What you need to make a delicious matcha smoothie bowl:
- Matcha collagen powder – see notes below for substitution ideas.
- Frozen riced cauliflower – this helps thicken the smoothie without adding junk!
- Frozen spinach – Don’t get scared by this! Spinach adds so much to the smoothie, but the taste is masked well by the other ingredients
- Avocado – One of my favorite smoothie ingredients! Avocado adds so much nutritional value while also giving a creamy texture to the smoothie bowl.
- Coconut or almond milk – or your dairy free milk of choice.
- Unflavored collagen, to add protein and thicken the smoothie
- Almond Butter – You can use cashew or another nut butter, or omit this.
- A few ice cubes.
What if I don’t have Matcha Collagen Powder?
If you don’t have Matcha Collagen Powder you can still make this! Just substitute 1 serving of your favorite collagen protein, and add 1 tsp of matcha powder if you have it on hand. If not, this still makes a delicious green smoothie bowl!

INGREDIENTS
- 1 Scoop Vital Protein’s Matcha Collagen Powder
- 1 cup frozen spinach
- 1/2 cup frozen riced cauliflower
- 1/4 avocado
- 1 date pitted
- 3/4 cup almond or coconut milk
- 1 tablespoon cashew or almond butter
- 3-4 ice cubes
INSTRUCTIONS

Place all ingredients in a blender and blend on high until smooth.

Pour into a bowl and top with desired toppings, such as blueberries, coconut flakes, and nuts!
