Grain-Free Gingersnap Cookies

Is anything more quintessentially holiday than gingersnaps? I grew up on sugar cookies, but since entering the foodie world I’ve learned that there was a gaping hole in my holiday cookie repertoire that could only be filled with soft, molassess-y, cinnamon-laced gingersnaps. These took a few tries to get right, but it was one of the most fun recipes I’ve ever created–and who doesn’t love eating gingersnaps all day? Easily the highlight of my 2020.

My big issue with paleo cookies is that most of them are made with almond flour which I find makes a dense cookie that sits in my stomach too long. I made these gingersnaps with cassava flour which I’ve found to be one of the best flours for gluten and grain-free baking all around!

Small-Batch Grain-Free Gingersnap Cookies

This recipe makes about 14 cookies, which to me is the perfect amount for a fun weekend treat while decorating the tree. Double it to make a big batch to share or box up as fun holiday gifts!

How to make the perfect Gluten-Free Gingersnap Cookies:

These one-bowl gingersnap cookies are quick and easy to whip up! You’ll just need to mix together your ingredients, scoop onto a parchment-lined sheet, then bake at 350 F for about 10 minutes. That’s it! Here’s what you’ll need to make it all happen (Yes, it’s only 10 ingredients!)

  • Coconut Oil: You can also use ghee, but I have not tested other oils in this recipe
  • Coconut sugar: this is a lower inflammatory sweetener that I use in all of my paleo baking. Can be subbed for regular sugar if needed.
  • Molasses: a key part of the perfect gingersnaps!
  • Cinnamon, ginger, and nutmeg: the spice trifecta that creates the gingersnap flavor we all love.
  • Baking Soda
  • Egg: 1 egg helps bind and gives rise to these cookies. I haven’t attempted a flax egg, but let me know if you do!
  • Cassava flour: This is key to a gluten-like texture and soft-yet-chewy gingersnaps!
  • Extra sugar: you can roll these in either coconut or regular sugar for the perfect crispy exterior.

Tips for the best Gluten Free Cookies:

These gingersnaps are pretty fool-proof and hard to mess up, but here are a few tips to help make the chewiest, best cookies that will quickly become a family favorite:

  • Remember to line your baking dish with parchment paper to prevent sticking.
  • Don’t overmix your batter!
  • Use room-temperature ingredients so everything mixes correctly.
  • Let your cookies rest on the baking sheet for a few minutes before moving to a cooling rack.
  • Don’t skip rolling these in sugar! It makes an unforgettable gingersnap.

Grain Free Gingersnaps

INGREDIENTS

  • 1/3 cup coconut oil softened
  • 1/2 cup sugar
  • 1 egg
  • 1 ⁄4 cup molasses
  • 1 cup + 1 tbsp cassava flour
  • 1 ⁄2 teaspoons baking soda
  • 2 tsp ground ginger
  • 1 teaspoon ground cinnamon
  • 1 ⁄2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • Coconut or regular sugar for rolling

INSTRUCTIONS

  1. Preheat oven to 350 F and place the rack in the middle of the oven. Line a baking sheet with parchment paper.
  2. In a medium bowl, stir together the egg, coconut sugar, coconut oil, and molasses until smooth and creamy, about 2 minutes.
  3. Stir in baking soda, ginger, cinnamon, cloves, then cassava flour. If the batter is too soft place in the fridge for 30 minutes to harden.
  4. Scoop 1-2 tbsp of cookie dough and roll into a ball, then place it in the extra sugar and roll to coat. Place on the prepared sheet, then lightly press down on the top of the dough to flatten. Repeat, placing the cookies 2-3 inches apart.
  5. Bake for 8-10 minutes, or until golden but still a bit gooey. Remove from oven and cool for at least 5 minutes before removing from the pan to a cooling rack.

    Made these. I found they were a bit dry but cassava flour settles in the package and without a weight measurement the difference in flour can be significant. I would bet if following the weight measurement on the Otto’s Package that the extra 1 tbsp of flour is not needed. They defiantly needed chilling (but I did use butter – so that could be a factor) but had the perfect crispy edge and soft chewy inside. I used blackstrap molasses and they were not overly sweet, if making these for kids use less molasses and then add to maple syrup to get the correct liquids measurement. I will defiantly be making these again!
