Grain-Free Apple Galette (Paleo)

It’s a wonderful day today because we’re making a gluten-free version of a signature fall dessert: an apple galette! In just a few weeks I’ll be living back in New England where I can finally go apple picking again and make an even better galette with fresh-picked apples, but I’m practicing my galette skills here in the meantime with this recipe.

I love paleo galettes because they tend to be a low-sugar way to enjoy whatever fruit or vegetables are in season. In this case, all you need to add to your apples are some cinnamon, nutmeg, and a pinch of coconut sugar to make a delicious filling that is full of apple goodness! Nothing complicated and no sugar crash afterward (though if you add some coconut milk ice cream who am I to stop you?)

What is a galette?

Galettes are rustic tarts filled with either fruits or veggies and baked “free-form” (no pie or tart pan.) I like to think of them as lazy pie which is SO up my alley. It’s got the flakey, delicious crust you love in a pie, and all of the mouthwatering filling, but none of the work of making a top crust or trying to lift a crust into a pie pan. This was going to be a pie recipe but why would you do that work when it can be a galette? No contest.

Grain-free Pie Crust

This galette crust follows roughly the same recipe as my paleo pie crust, which is a cassava flour base. I love cassava flour for my crusts because it’s crisp, flakey, and doesn’t get soggy. Plus it’s very easy to roll and keep together, and is easily repaired if it cracks while you’re rolling and making your galette.  As far as making the crust, you just mix together the ingredients and allow it to chill! Nothing complicated at all.

Tips for the best Grain-Free Apple Galette

One of the reasons I love galettes is because they’re so easy and forgiving. That said, here are a few tips to help you make the most delicious grain-free galette!

  • Use the spoon-and-sweep method for measuring your flour so you don’t pack it too much
  • Don’t forget your egg wash! This really helps the crust to taste like your favorite rustic pie crust.
  • Roll your galette crust out of parchment paper to prevent sticking, and fold the edges in using the parchment to help guide the dough.
  • Don’t overdo the sugar when you make your filling–the apples are perfectly sweet, especially with a touch of cinnamon!
  • If you want to get extra fancy you can top this off with some coconut milk ice cream or whipped coconut cream!

Grain-Free Apple Galette

INGREDIENTS

For crust:

  • 1 ½ cups cassava flour
  • cup coconut oil softened
  • 1 egg
  • 1/4 tsp salt
  • ½ cup water

For Apples:

  • 3 apples peeled and sliced
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp ginger
  • 1 egg whisked for egg wash

INSTRUCTIONS

  1. To make crust, cut coconut oil into cassava flour with a fork until crumbly. Stir in egg, salt, and water until well combined. Place in the fridge to chill for 25 minutes while you make the apple filling.
  2. Preheat oven to 400 F. Combine all apple ingredients together in a large bowl.
  3. Roll the chilled dough out on a large circle on parchment paper dusted with cassava flour. Place the apple filling on the crust, leaving about an inch and a half of dough around the edges to fold in.
  4. Fold in the edges, pressing lightly to seal.
  5. Brush the crust with the egg wash.
  6. Bake in the preheated oven for 40 minutes, or until golden on the edges.
  7. Allow to cool for 10 minutes, then enjoy!
