Creamy Super Greens Soup

A creamy, nutrient packed soup with a kick of ginger and a dose of gut-healing bone broth!

Hey guys! Sorry I went dark for so long. I was in NYC with my mom for a few days, and suffice it to say, I went dark. I needed a few days to break off, empty my mind of stress, and let my body rest. Spending a ton of time with my favorite human being made it all that much better. She’s just the coolest.

I’ve always been a huge fan of my parents, but I feel like I love them even more as I get older and realize how hard it is to be an adult (and still be gracious and positive all the time.)   It’s stinkin hard, and they’ve always made it look easy. I’ve also been learning how hard it is to make friends when you get older, and it makes me love that I’m really friends with my parents, and not just close because we’re related. I’m hoping I can go back to NYC really soon to spend a little more time with them in my favorite city. And then I hope I can be back there permanently right after. Life is too short to not be in NYC, you know?
In other news, my stomach has needed a little RnR lately after some probiotics, and this soup has totally fit the bill. It’s hearty, but not so heavy that you won’t want it now during the spring!

Creamy Super Greens Soup

PREP TIME 5 minutes
COOK TIME 25 minutes
TOTAL TIME 30 minutes
SERVINGS 4

INGREDIENTS

  • 1 tbsp coconut oil
  • 1 inch fresh ginger grated
  • ¼ cup diced sweet onion
  • 2 cloves garlic minced
  • ½ tsp salt
  • 2 cups cut asparagus spears
  • 1 cup broccoli florets
  • 1 large bunch kale
  • 1 cup chopped spinach
  • 1 can full fat coconut milk
  • 3 cups chicken bone broth

INSTRUCTIONS

  1. Place coconut oil in a large pot over medium heat. Add ginger, onions and garlic saute until translucent. Add in the salt, asparagus, broccoli, kale, spinach, milk, and broth.
  2. Bring the mixture to a boil, and then reduce to medium heat. Cover the pot and allow to simmer 10-15 minutes, or until the vegetables are soft.
  3. Using an immersion blender in the pot, blend the soup until smooth, or blend in batches in a high speed blender.
  4. Serve garnished with extra coconut milk! Enjoy!
