A creamy, nutrient packed soup with a kick of ginger and a dose of gut-healing bone broth!
Hey guys! Sorry I went dark for so long. I was in NYC with my mom for a few days, and suffice it to say, I went dark. I needed a few days to break off, empty my mind of stress, and let my body rest. Spending a ton of time with my favorite human being made it all that much better. She’s just the coolest.
Creamy Super Greens Soup
INGREDIENTS
- 1 tbsp coconut oil
- 1 inch fresh ginger grated
- ¼ cup diced sweet onion
- 2 cloves garlic minced
- ½ tsp salt
- 2 cups cut asparagus spears
- 1 cup broccoli florets
- 1 large bunch kale
- 1 cup chopped spinach
- 1 can full fat coconut milk
- 3 cups chicken bone broth
INSTRUCTIONS

Place coconut oil in a large pot over medium heat. Add ginger, onions and garlic saute until translucent. Add in the salt, asparagus, broccoli, kale, spinach, milk, and broth.

Bring the mixture to a boil, and then reduce to medium heat. Cover the pot and allow to simmer 10-15 minutes, or until the vegetables are soft.

Using an immersion blender in the pot, blend the soup until smooth, or blend in batches in a high speed blender.

Serve garnished with extra coconut milk! Enjoy!
