Salted Cardamom Honey Roasted Pears

Good morning lovelies! I’m here with an updated version of a honey roasted pear recipe from last year. It’s new and improved and I know you’re going to love it! If a recipe is worth me coming back to it to reshoot and update then you know it’s a good one.
You’ve probably heard me complain about fruit by now—it’s no secret that I’m not exactly a fan. But every once in a while I find a way to really enjoy an apple or some blueberries—especially in a pie or a crumble.
Pears? Pears are new for me. A little part of me was afraid I’d have an allergic reaction to them because I hadn’t had one in years (I’m fine, btw.) I have to admit that once I got over my ridiculous fears I found myself actually really enjoying the pears. Would I choose them as a snack? Never. But an allergy-friendly dessert? Ok, I’m listening.
I’m also loving the versatility of pears when it comes to spices—they go great with ginger, nutmeg, cinnamon, cardamom, etc. I need to try this recipe with apples and see if the same holds true—and if the texture can pull off being baked on a baking sheet without a crust or topping to protect it.

In short? You win, pears. You win.

Ingredients for Salted Honey Roasted Pears:

I love baked fruit desserts such a cobbler, crisps, and these roasted pears, because they’re so easy and flavorful! They’re also a crowd pleaser and a simple dessert to make for entertaining, especially because they’re such an allergy-friendly option. And the best part? Minimal ingredients. And if you despise running to the grocery store as much as I do, then you know what I mean! Here’s what you need:
  • Pears: 4 ripe pears. You want them to be soft, but not mushy.  Bosc and Anjou pears work best for baking,but you can use other pears if needed!
  • Honey: You can sub maple syrup for a vegan version of this recipe
  • Cardamom: The best spice! I love the cardamom contrasted with the pears.
  • Cinnamon: Another comforting spice to add flavor depth to the pears.
  • Coconut Oil: This is what you’ll use to roast the pears. Can sub butter or ghee.
  • Grain-Free Granola: I used my salted walnut grain-free granola, but you can sub sliced almonds and coconut flakes if you don’t have granola.
  • Flakey sea salt: Use flakey Maldon salt to top off your pears!

Tips for making Salted Cardamom Honey Roasted Pears:

  • I topped these off with grain-free granola, but you can use slivered almonds or coconut flakes if that’s what you have on hand.
  • Store leftovers in the fridge for up to 4 days.
  • If you want to make these EXTRA awesome, serve with vanilla ice cream or whipped cream.

Cardamom Honey Roasted Pears

INGREDIENTS

  • 4 pears halved and cored
  • 2 tsp cardamom
  • 1 tsp cinnamon
  • 2 tbsp coconut oil
  • 1/4 cup honey
  • 1/2 cup grain-free granola
  • 1/2 tsp flakey sea salt

INSTRUCTIONS

  1. Preheat oven to 350ºF. Line a rimmed baking sheet with parchment and put coconut flakes on the parchment
  2. Place the coconut flakes in the oven and toast for 5 minutes, checking to make sure they don't burn. Remove the coconut from the oven and set aside.
  3. Place pears on parchment, cut sides up, and brush with melted coconut oil and then sprinkle with cardamom and cinnamon. Drizzle with about half of the honey and then roast for 30 minutes, until softened.
  4. Top roasted pears with the granola, additional honey, and flakey sea salt. Serve and enjoy!
